
Exotic Chinese Lemon Chicken

Ingredients:
- 500 grams Boneless Chicken Breast
- 1/4 cup Cornstarch
- 2 Eggs
- for deep frying Oil
- 1 Lemon
- 1/2 cup Sugar
- 1/2 teaspoon Table Salt
- 1 cup Hot Water
- 1 tablespoon Soy Sauce
- 1 tablespoon White Vinegar
- 2 tablespoons each Cornstarch and Water Mixture
Instructions:
- Cut the chicken into 1-inch cubes and mix them with 2 tablespoons of cornstarch. Let them marinade for 20 minutes.
- In a deep saucepan, heat oil for deep frying. In a separate bowl, beat the eggs.
- Dip the chicken cubes in egg and then in cornstarch before frying until golden. Remember not to crowd the pan for even cooking. Remove chicken and set aside.
- In a different saucepan, combine juice of a lemon, sugar, salt, hot water, soy sauce, and vinegar. Stir over medium heat until sugar dissolves.
- Add the cornstarch and water mixture to the pan and continue stirring until the mixture thickens.
- Pour this sauce over the fried chicken cubes and toss well to coat.
- Serve the Exotic Chinese Lemon Chicken hot with fried rice or noodles.
