Exotic Chinese Lemon Chicken

Ingredients:

  • 500 grams Boneless Chicken Breast
  • 1/4 cup Cornstarch
  • 2 Eggs
  • for deep frying Oil
  • 1 Lemon
  • 1/2 cup Sugar
  • 1/2 teaspoon Table Salt
  • 1 cup Hot Water
  • 1 tablespoon Soy Sauce
  • 1 tablespoon White Vinegar
  • 2 tablespoons each Cornstarch and Water Mixture

Instructions:

  1. Cut the chicken into 1-inch cubes and mix them with 2 tablespoons of cornstarch. Let them marinade for 20 minutes.
  2. In a deep saucepan, heat oil for deep frying. In a separate bowl, beat the eggs.
  3. Dip the chicken cubes in egg and then in cornstarch before frying until golden. Remember not to crowd the pan for even cooking. Remove chicken and set aside.
  4. In a different saucepan, combine juice of a lemon, sugar, salt, hot water, soy sauce, and vinegar. Stir over medium heat until sugar dissolves.
  5. Add the cornstarch and water mixture to the pan and continue stirring until the mixture thickens.
  6. Pour this sauce over the fried chicken cubes and toss well to coat.
  7. Serve the Exotic Chinese Lemon Chicken hot with fried rice or noodles.
