Exotic Chinese Fried Rice

Ingredients:

  • 2 cups Long grain rice
  • 2 tablespoons Vegetable oil
  • 4 cloves Garlic
  • 1 medium size Onion
  • 1 large Carrot
  • 1/2 cup Frozen peas
  • 3 tablespoons Soy Sauce
  • 2 tablespoons Oyster Sauce
  • 3 Eggs
  • 1 cup Shrimp
  • 1 cup Chicken breast
  • 2 stalks Scallions

Instructions:

  1. Cook the rice as per the instructions on the package and set it aside.
  2. Heat 1 tablespoon oil in a pan over medium heat. Add the shrimp and chicken, cook until they become golden. Remove them from the pan and set aside.
  3. In the same pan, add another tablespoon of oil. Add the chopped garlic and onion. Stir until aromatic.
  4. Add the chopped carrots and peas, stir fry until they are cooked.
  5. Push the vegetables to one side of the pan, add the eggs to the other side and scramble them.
  6. Mix the vegetables and scrambled eggs together. Add the cooked shrimp, chicken, and rice.
  7. Add the soy sauce, oyster sauce. Stir everything well to combine. Cook for another 2-3 minutes.
  8. Garnish with chopped scallions and serve hot.
