
Exotic Chinese Chicken Congee

Ingredients:
- 1 whole Chicken
- 1 Cup Rice
- 2 inch piece Ginger
- 3 cloves Garlic
- 4 stalks Green Onions
- 2 teaspoon Salt
- 2 tablespoon Sesame Oil
- 2 whole Star Anise
- to taste Soy Sauce
Instructions:
- Rinse the rice under cold water until water runs clear. Then soak the rice in water for 15 minutes. After 15 minutes, drain the water.
- Place the chicken in a large pot and fill it with enough water to cover the chicken.
- Add ginger, garlic, star anise, and salt. Bring the pot to a boil over medium-high heat.
- After boiling, reduce the heat to low, cover, and let it simmer for about 30 minutes.
- Remove the chicken from the pot and let it cool. Once cool, shred the chicken and remove the bones.
- Add the soaked and drained rice to the pot with the broth and simmer for 20-30 minutes, until rice breaks down and thickens the soup.
- Add the shredded chicken back into the pot.
- Season the congee with soy sauce and sesame oil. Simmer for another 5 minutes.
- Serve the congee hot, garnished with chopped green onions.
