Exotic Chinese Chicken Congee

Ingredients:

  • 1 whole Chicken
  • 1 Cup Rice
  • 2 inch piece Ginger
  • 3 cloves Garlic
  • 4 stalks Green Onions
  • 2 teaspoon Salt
  • 2 tablespoon Sesame Oil
  • 2 whole Star Anise
  • to taste Soy Sauce

Instructions:

  1. Rinse the rice under cold water until water runs clear. Then soak the rice in water for 15 minutes. After 15 minutes, drain the water.
  2. Place the chicken in a large pot and fill it with enough water to cover the chicken.
  3. Add ginger, garlic, star anise, and salt. Bring the pot to a boil over medium-high heat.
  4. After boiling, reduce the heat to low, cover, and let it simmer for about 30 minutes.
  5. Remove the chicken from the pot and let it cool. Once cool, shred the chicken and remove the bones.
  6. Add the soaked and drained rice to the pot with the broth and simmer for 20-30 minutes, until rice breaks down and thickens the soup.
  7. Add the shredded chicken back into the pot.
  8. Season the congee with soy sauce and sesame oil. Simmer for another 5 minutes.
  9. Serve the congee hot, garnished with chopped green onions.
