
Exotic Chicken Parmesan Frittata

Ingredients:
- 2 cups Chicken breast, boneless and skinless
- 8 Eggs
- 1 cup Parmesan cheese, freshly grated
- 1 cup Mozzarella cheese, shredded
- 1 cup Tomatoes, diced
- 1 Red onion, finely chopped
- 1/2 cup Basil leaves, fresh
- 1 tbsp Olive oil
- 1/2 tsp Salt
- 1/4 tsp Black pepper, freshly ground
- 1 tsp Chili flakes
Instructions:
- Preheat oven to 350 degrees F (175 degrees C).
- Heat olive oil in a 10-inch non-stick, ovenproof skillet over medium-high heat. Add in the diced chicken breast, season with salt and pepper and cook until no longer pink, about 5 to 7 minutes. Remove from skillet and set aside.
- In the same skillet, add chopped red onion, sauté until softened and translucent, about 5 minutes.
- In a large bowl not far away, beat eggs, and then mix in diced tomatoes, fresh basil leaves, chili flakes, Parmesan cheese and half of the mozzarella cheese.
- Add cooked chicken back into the skillet with the onions, then pour the egg mixture over the chicken and onions.
- Sprinkle the remaining mozzarella cheese on top, then place the skillet in the preheated oven.
- Bake until eggs are set and cheese is golden brown, about 20 to 30 minutes.
- The frittata is ready when a knife inserted into the middle comes out clean.
- Let it cool for 5 minutes before slicing and serving.
- Serve the Exotic Chicken Parmesan Frittata warm with a drizzling of extra virgin olive oil on top if you like, and fresh basil leaves for garnish. Enjoy your exotic Italian breakfast!
