Exotic Chicken Parmesan Frittata

Ingredients:

  • 2 cups Chicken breast, boneless and skinless
  • 8 Eggs
  • 1 cup Parmesan cheese, freshly grated
  • 1 cup Mozzarella cheese, shredded
  • 1 cup Tomatoes, diced
  • 1 Red onion, finely chopped
  • 1/2 cup Basil leaves, fresh
  • 1 tbsp Olive oil
  • 1/2 tsp Salt
  • 1/4 tsp Black pepper, freshly ground
  • 1 tsp Chili flakes

Instructions:

  1. Preheat oven to 350 degrees F (175 degrees C).
  2. Heat olive oil in a 10-inch non-stick, ovenproof skillet over medium-high heat. Add in the diced chicken breast, season with salt and pepper and cook until no longer pink, about 5 to 7 minutes. Remove from skillet and set aside.
  3. In the same skillet, add chopped red onion, sauté until softened and translucent, about 5 minutes.
  4. In a large bowl not far away, beat eggs, and then mix in diced tomatoes, fresh basil leaves, chili flakes, Parmesan cheese and half of the mozzarella cheese.
  5. Add cooked chicken back into the skillet with the onions, then pour the egg mixture over the chicken and onions.
  6. Sprinkle the remaining mozzarella cheese on top, then place the skillet in the preheated oven.
  7. Bake until eggs are set and cheese is golden brown, about 20 to 30 minutes.
  8. The frittata is ready when a knife inserted into the middle comes out clean.
  9. Let it cool for 5 minutes before slicing and serving.
  10. Serve the Exotic Chicken Parmesan Frittata warm with a drizzling of extra virgin olive oil on top if you like, and fresh basil leaves for garnish. Enjoy your exotic Italian breakfast!
