Exotic Cajun Shrimp Jambalaya

Ingredients:

  • 2 cups long grain white rice
  • 1 pound large shrimp, peeled and deveined
  • to taste Cajun seasoning
  • 2 tablespoons canola oil
  • 1 whole onion, chopped
  • 1 whole bell pepper, chopped
  • 2 cloves garlic cloves, minced
  • 1 can can of diced tomatoes
  • 4 cups chicken broth
  • 1 pound andouille sausage, sliced
  • to taste salt
  • to taste pepper
  • 1 bunch green onions, chopped

Instructions:

  1. Toss shrimp with Cajun seasoning and set aside.
  2. Heat oil in a large pot over medium heat. Add onion, bell pepper, and garlic, and cook until vegetables are softened.
  3. Stir in diced tomatoes, chicken broth, sausage, salt, and pepper. Bring to a simmer.
  4. Stir in rice and simmer, covered, for 20 minutes.
  5. Add seasoned shrimp to the pot and cook until shrimp are pink and cooked through, about 5 minutes.
  6. Garnish with chopped green onions before serving.
