
Exotic Cajun Shrimp Jambalaya

Ingredients:
- 2 cups long grain white rice
- 1 pound large shrimp, peeled and deveined
- to taste Cajun seasoning
- 2 tablespoons canola oil
- 1 whole onion, chopped
- 1 whole bell pepper, chopped
- 2 cloves garlic cloves, minced
- 1 can can of diced tomatoes
- 4 cups chicken broth
- 1 pound andouille sausage, sliced
- to taste salt
- to taste pepper
- 1 bunch green onions, chopped
Instructions:
- Toss shrimp with Cajun seasoning and set aside.
- Heat oil in a large pot over medium heat. Add onion, bell pepper, and garlic, and cook until vegetables are softened.
- Stir in diced tomatoes, chicken broth, sausage, salt, and pepper. Bring to a simmer.
- Stir in rice and simmer, covered, for 20 minutes.
- Add seasoned shrimp to the pot and cook until shrimp are pink and cooked through, about 5 minutes.
- Garnish with chopped green onions before serving.
