Exotic Breakfast Pasta

Ingredients:

  • 500 grams Pasta
  • 2 tablespoons Olive oil
  • 2 cloves Garlic
  • 200 grams Cherry tomatoes
  • 2 bunches Fresh basil leaves
  • 100 grams Parmesan cheese
  • 4 large-sized Eggs
  • to taste Salt
  • to taste Pepper

Instructions:

  1. Boil the pasta in a large pot of salted water until al dente. Drain, saving a cup of pasta water.
  2. Heat the olive oil in a large pan over medium heat.
  3. Mince the garlic and add it to the pan. Sauté until soft.
  4. Halve the cherry tomatoes and add them to the pan. Cook until they start to soften.
  5. Add the cooked pasta, a sprinkle of cheese, and the pasta water to the pan. Mix well.
  6. Crack the eggs one by one into the pan, making sure not to break them. Cover the pan with a lid and simmer until the eggs are poached.
  7. Season with salt and pepper to taste. Tear the basil leaves and add them to the pasta.
  8. Serve hot with more parmesan cheese on top.
