
Exotic Breakfast Pasta

Ingredients:
- 500 grams Pasta
- 2 tablespoons Olive oil
- 2 cloves Garlic
- 200 grams Cherry tomatoes
- 2 bunches Fresh basil leaves
- 100 grams Parmesan cheese
- 4 large-sized Eggs
- to taste Salt
- to taste Pepper
Instructions:
- Boil the pasta in a large pot of salted water until al dente. Drain, saving a cup of pasta water.
- Heat the olive oil in a large pan over medium heat.
- Mince the garlic and add it to the pan. Sauté until soft.
- Halve the cherry tomatoes and add them to the pan. Cook until they start to soften.
- Add the cooked pasta, a sprinkle of cheese, and the pasta water to the pan. Mix well.
- Crack the eggs one by one into the pan, making sure not to break them. Cover the pan with a lid and simmer until the eggs are poached.
- Season with salt and pepper to taste. Tear the basil leaves and add them to the pasta.
- Serve hot with more parmesan cheese on top.
