Exotic Bison Breakfast Scramble

Ingredients:

  • 8 oz Bison Sausage
  • 1 large Sweet potato
  • 1 medium Red bell pepper
  • 1 cup Spinach
  • 4 large Eggs
  • 1 cup Cheddar cheese
  • to taste Green onion
  • to taste Salt and pepper

Instructions:

  1. Peel and finely dice the sweet potato. Dice the red bell pepper.
  2. In a large frying pan over medium heat, cook the bison sausage, breaking it up into small pieces.
  3. Add the sweet potato and red bell pepper to the pan. Cook for about 10 minutes, until the vegetables are tender and the meat is fully cooked.
  4. While the meat and vegetables are cooking, whisk the eggs in a bowl. Season with salt and pepper.
  5. Once the meat and vegetables are cooked, add the spinach and cook until it is wilted.
  6. Pour the whisked eggs into the pan and cook until they are set, stirring frequently.
  7. Sprinkle with cheddar cheese and cook until the cheese is melted. Remove from heat and sprinkle with green onions before serving.
