
Exotic Bison Breakfast Scramble

Ingredients:
- 8 oz Bison Sausage
- 1 large Sweet potato
- 1 medium Red bell pepper
- 1 cup Spinach
- 4 large Eggs
- 1 cup Cheddar cheese
- to taste Green onion
- to taste Salt and pepper
Instructions:
- Peel and finely dice the sweet potato. Dice the red bell pepper.
- In a large frying pan over medium heat, cook the bison sausage, breaking it up into small pieces.
- Add the sweet potato and red bell pepper to the pan. Cook for about 10 minutes, until the vegetables are tender and the meat is fully cooked.
- While the meat and vegetables are cooking, whisk the eggs in a bowl. Season with salt and pepper.
- Once the meat and vegetables are cooked, add the spinach and cook until it is wilted.
- Pour the whisked eggs into the pan and cook until they are set, stirring frequently.
- Sprinkle with cheddar cheese and cook until the cheese is melted. Remove from heat and sprinkle with green onions before serving.
