Exotic BBQ Pulled Pork Tacos with Pineapple Slaw

Ingredients:

  • 1 lb Pork shoulder
  • 1 cup BBQ sauce
  • 4 None Soft corn tortillas
  • 1/2 None Pineapple
  • 1 bunch Fresh coriander
  • 2 tablespoons Lime juice
  • 1 cup White cabbage
  • 1 None Carrot
  • 1 tablespoon Mayonnaise
  • 1 teaspoon Sugar
  • 1 pinch Salt
  • 1 pinch Pepper

Instructions:

  1. Place the pork shoulder in a slow cooker and pour the BBQ sauce over it. Cook on low for 5 hours or until the pork is tender and can be shredded easily with a fork.
  2. While the pork is cooking, prepare the pineapple slaw. Chop the pineapple and coriander, shred the cabbage and carrot, and mix everything in a bowl together with mayonnaise, lime juice, sugar, salt, and pepper. Set aside in the fridge.
  3. Once the pork is ready, shred it with a fork and mix it with some of the cooking juices from the slow cooker.
  4. Warm the tortillas according to the package instructions.
  5. To assemble the tacos, spread some of the pulled pork on each tortilla, top with a generous amount of pineapple slaw, and garnish with extra coriander if desired.
