Exotic BBQ Pulled Pork Tacos with Pineapple Slaw

Ingredients:
- 1 lb Pork shoulder
- 1 cup BBQ sauce
- 4 None Soft corn tortillas
- 1/2 None Pineapple
- 1 bunch Fresh coriander
- 2 tablespoons Lime juice
- 1 cup White cabbage
- 1 None Carrot
- 1 tablespoon Mayonnaise
- 1 teaspoon Sugar
- 1 pinch Salt
- 1 pinch Pepper
Instructions:
- Place the pork shoulder in a slow cooker and pour the BBQ sauce over it. Cook on low for 5 hours or until the pork is tender and can be shredded easily with a fork.
- While the pork is cooking, prepare the pineapple slaw. Chop the pineapple and coriander, shred the cabbage and carrot, and mix everything in a bowl together with mayonnaise, lime juice, sugar, salt, and pepper. Set aside in the fridge.
- Once the pork is ready, shred it with a fork and mix it with some of the cooking juices from the slow cooker.
- Warm the tortillas according to the package instructions.
- To assemble the tacos, spread some of the pulled pork on each tortilla, top with a generous amount of pineapple slaw, and garnish with extra coriander if desired.
