
Exotic American Breakfast Rice

Ingredients:
- 1 cup Long grain rice
- 2 cups Water
- 1 medium, diced Green bell pepper
- 1 small, diced Onion
- 2 stalks, chopped Celery
- 1 cup, diced Andouille sausage
- 1 cup, peeled and deveined Shrimp
- 1 large, diced Tomato
- 2 cloves, minced Garlic
- 2 teaspoons Cajun seasoning
- to taste Salt
- to taste Black pepper
Instructions:
- Rinse the rice under cold water until the water runs clear. This is to remove excess starch and prevent clumping.
- In a large pot, bring the water to a boil. Once boiling, add the rice, reduce the heat to low, cover, and let simmer for 15-20 minutes or until the rice is tender and the water is absorbed. Remove from heat and let sit, covered, for another 5 minutes.
- In a separate pan, add oil over medium heat. Add in the diced green bell pepper, onion, celery, and garlic. Saute until the vegetables are soft and the onion is translucent.
- Add the diced andouille sausage to the pan and cook until browned.
- Stir in the shrimp and cook until they turn pink.
- Add the diced tomato, cajun seasoning, salt, and black pepper. Stir well to combine all the ingredients.
- Finally, stir in the cooked rice with the vegetable and meat mixture. Let it cook for a few more minutes so that the rice absorbs all the flavors.
- Adjust the seasoning if needed, serve hot and enjoy this exotic American breakfast rice!
