Exotic American Breakfast Rice

Ingredients:

  • 1 cup Long grain rice
  • 2 cups Water
  • 1 medium, diced Green bell pepper
  • 1 small, diced Onion
  • 2 stalks, chopped Celery
  • 1 cup, diced Andouille sausage
  • 1 cup, peeled and deveined Shrimp
  • 1 large, diced Tomato
  • 2 cloves, minced Garlic
  • 2 teaspoons Cajun seasoning
  • to taste Salt
  • to taste Black pepper

Instructions:

  1. Rinse the rice under cold water until the water runs clear. This is to remove excess starch and prevent clumping.
  2. In a large pot, bring the water to a boil. Once boiling, add the rice, reduce the heat to low, cover, and let simmer for 15-20 minutes or until the rice is tender and the water is absorbed. Remove from heat and let sit, covered, for another 5 minutes.
  3. In a separate pan, add oil over medium heat. Add in the diced green bell pepper, onion, celery, and garlic. Saute until the vegetables are soft and the onion is translucent.
  4. Add the diced andouille sausage to the pan and cook until browned.
  5. Stir in the shrimp and cook until they turn pink.
  6. Add the diced tomato, cajun seasoning, salt, and black pepper. Stir well to combine all the ingredients.
  7. Finally, stir in the cooked rice with the vegetable and meat mixture. Let it cook for a few more minutes so that the rice absorbs all the flavors.
  8. Adjust the seasoning if needed, serve hot and enjoy this exotic American breakfast rice!
