Exotic Alligator Sausage Gumbo

Ingredients:
- 1 lb Alligator sausage
- 2 Tablespoons Canola oil
- 1 Cup Onion, chopped
- 1 Cup Green bell pepper, chopped
- 2 Cloves Garlic, minced
- 1 Can Tomatoes, diced
- 4 Cups Chicken stock
- 2 Cups Okra, sliced
- 1.5 Cups Long grain rice
- To taste Salt and pepper
Instructions:
- Heat the oil in a large pot over medium heat. Add the sausage and sauté until browned, then remove it from the pot and set aside.
- In the same pot, sauté the onions, bell pepper, and garlic until softened. Then add the diced tomatoes, chicken stock, and salt and pepper.
- Bring the mixture to a boil, then reduce to a simmer. Add the sausage back into the pot, along with the okra. Simmer for about an hour.
- In a separate pot, cook the rice according to the package instructions. Once cooked, add the rice to the gumbo, stir well, and cook for another 20 minutes.
- Adjust seasoning if necessary. Ladle the gumbo into bowls and serve.
