Exotic Alligator Sausage Gumbo

Ingredients:

  • 1 lb Alligator sausage
  • 2 Tablespoons Canola oil
  • 1 Cup Onion, chopped
  • 1 Cup Green bell pepper, chopped
  • 2 Cloves Garlic, minced
  • 1 Can Tomatoes, diced
  • 4 Cups Chicken stock
  • 2 Cups Okra, sliced
  • 1.5 Cups Long grain rice
  • To taste Salt and pepper

Instructions:

  1. Heat the oil in a large pot over medium heat. Add the sausage and sauté until browned, then remove it from the pot and set aside.
  2. In the same pot, sauté the onions, bell pepper, and garlic until softened. Then add the diced tomatoes, chicken stock, and salt and pepper.
  3. Bring the mixture to a boil, then reduce to a simmer. Add the sausage back into the pot, along with the okra. Simmer for about an hour.
  4. In a separate pot, cook the rice according to the package instructions. Once cooked, add the rice to the gumbo, stir well, and cook for another 20 minutes.
  5. Adjust seasoning if necessary. Ladle the gumbo into bowls and serve.
