
Egg Curry

Ingredients:
- 6 whole Eggs
- 2 large Onions
- 2 large Tomatoes
- 2 pieces Green Chillies
- 3 cloves Garlic Cloves
- 1 inch piece Ginger
- 1/2 tsp Turmeric Powder
- 1 tsp Red Chilli Powder
- 1 tsp Garam Masala
- 1/2 tsp Cumin Seeds
- 1 tsp Coriander Powder
- to taste Salt
- 2 tbsp Oil
- 1/4 cup chopped Coriander Leaves
Instructions:
- Hard-boil the eggs, peel and keep them aside.
- Chop the onions, tomatoes, green chillies, ginger and garlic and keep them aside.
- Heat oil in a pan, add cumin seeds. Once it crackles, add the chopped onions and sauté until they turn golden brown.
- Add the chopped ginger, garlic, green chillies and sauté for another 2 minutes.
- Add the tomatoes, red chilli powder, turmeric powder, coriander powder and salt. Cook until the tomatoes turn mushy and the spices blend well.
- Add 2 cups of water and bring the mixture to a boil.
- Slit the hard-boiled eggs on the sides, and add them to the pan. Simmer for 10 minutes.
- Sprinkle garam masala and chopped coriander leaves on top, and serve hot with rice or Indian bread.
