Egg Curry

Ingredients:

  • 6 whole Eggs
  • 2 large Onions
  • 2 large Tomatoes
  • 2 pieces Green Chillies
  • 3 cloves Garlic Cloves
  • 1 inch piece Ginger
  • 1/2 tsp Turmeric Powder
  • 1 tsp Red Chilli Powder
  • 1 tsp Garam Masala
  • 1/2 tsp Cumin Seeds
  • 1 tsp Coriander Powder
  • to taste Salt
  • 2 tbsp Oil
  • 1/4 cup chopped Coriander Leaves

Instructions:

  1. Hard-boil the eggs, peel and keep them aside.
  2. Chop the onions, tomatoes, green chillies, ginger and garlic and keep them aside.
  3. Heat oil in a pan, add cumin seeds. Once it crackles, add the chopped onions and sauté until they turn golden brown.
  4. Add the chopped ginger, garlic, green chillies and sauté for another 2 minutes.
  5. Add the tomatoes, red chilli powder, turmeric powder, coriander powder and salt. Cook until the tomatoes turn mushy and the spices blend well.
  6. Add 2 cups of water and bring the mixture to a boil.
  7. Slit the hard-boiled eggs on the sides, and add them to the pan. Simmer for 10 minutes.
  8. Sprinkle garam masala and chopped coriander leaves on top, and serve hot with rice or Indian bread.
