
Easy Mexican Quesadilla

Ingredients:
- 8 pieces flour tortillas
- 2 cups cheddar cheese
- 1 cup cooked chicken breast
- 1 piece green bell pepper
- 1 piece red onion
- 2 tablespoons olive oil
- 3 teaspoons Mexican seasoning
- 1 cup sour cream
- 1 cup salsa
Instructions:
- 1. Chop the cooked chicken, bell pepper, and onion into small pieces.
- 2. Heat the olive oil in a pan over medium heat and sauté the chicken, bell pepper, onion and Mexican seasoning for about 5 minutes until cooked.
- 3. Take a tortilla and sprinkle a quarter of the cheese, followed by half of the cooked mixture, and then another quarter of the cheese. Cover with another tortilla.
- 4. Cook the quesadilla in a frying pan over medium heat for about 2-3 minutes on each side, until the tortilla is crispy and the cheese is melted. Repeat the process with the remaining ingredients.
- 5. Slice the quesadillas into halves or quarters. Serve hot with sour cream and salsa on the side.
