Easy Mexican Quesadilla

Ingredients:

  • 8 pieces flour tortillas
  • 2 cups cheddar cheese
  • 1 cup cooked chicken breast
  • 1 piece green bell pepper
  • 1 piece red onion
  • 2 tablespoons olive oil
  • 3 teaspoons Mexican seasoning
  • 1 cup sour cream
  • 1 cup salsa

Instructions:

  1. 1. Chop the cooked chicken, bell pepper, and onion into small pieces.
  2. 2. Heat the olive oil in a pan over medium heat and sauté the chicken, bell pepper, onion and Mexican seasoning for about 5 minutes until cooked.
  3. 3. Take a tortilla and sprinkle a quarter of the cheese, followed by half of the cooked mixture, and then another quarter of the cheese. Cover with another tortilla.
  4. 4. Cook the quesadilla in a frying pan over medium heat for about 2-3 minutes on each side, until the tortilla is crispy and the cheese is melted. Repeat the process with the remaining ingredients.
  5. 5. Slice the quesadillas into halves or quarters. Serve hot with sour cream and salsa on the side.
