
Easy Mexican Fish Tacos

Ingredients:
- 4 pieces Tilapia fillets
- 8 pieces Corn tortillas
- 2 whole Lime
- 1/4 cup Fresh cilantro
- 1 small Red onion
- to taste Guacamole
- to taste Salsa
- to taste Salt
- to taste Pepper
- 2 tbsp Oil
Instructions:
- 1. Prep your ingredients - chop the cilantro, slice the onions and limes, and have your guacamole and salsa ready.
- 2. Season the tilapia fillets with salt and pepper to taste.
- 3. Heat 2 tablespoons of oil in a non-stick skillet over medium-high heat. Add the fillets and cook for 3-4 minutes on each side, until the fish flakes easily with a fork. Remove from heat.
- 4. Warm the corn tortillas in a dry skillet over medium heat until soft and pliable.
- 5. To assemble the tacos, lay a tortilla flat and spread a spoonful of guacamole across the middle. Add a piece of fish, followed by a sprinkle of cilantro and onion. Squeeze a little lime juice over the top, and add salsa to taste.
- 6. Serve immediately, with extra limes on the side for squeezing.
