Easy Mexican Breakfast Burritos

Ingredients:

  • 4 Eggs
  • 2 Tortillas
  • 0.5 cup Cheddar Cheese
  • 0.5 cup Black Beans
  • 1 Avocado
  • To Taste Salsa
  • To Taste Cilantro
  • To Taste Salt and Pepper

Instructions:

  1. Heat a non-stick skillet over medium heat. Crack the eggs into a bowl and whisk until the yolks and whites are fully combined. Season with salt and pepper.
  2. Pour the beaten eggs into the skillet and scramble until they're just set, but still a little bit runny. Remove from heat.
  3. Warm up the black beans and tortillas.
  4. Place the scrambled eggs in the center of each tortilla. Top with cheddar cheese, black beans, diced avocado, salsa, and cilantro.
  5. Fold the sides of the tortilla over the fillings, then roll the burrito up from the bottom.
  6. Serve immediately, with extra salsa on the side if desired.
