
Easy Mexican Breakfast Burritos

Ingredients:
- 4 Eggs
- 2 Tortillas
- 0.5 cup Cheddar Cheese
- 0.5 cup Black Beans
- 1 Avocado
- To Taste Salsa
- To Taste Cilantro
- To Taste Salt and Pepper
Instructions:
- Heat a non-stick skillet over medium heat. Crack the eggs into a bowl and whisk until the yolks and whites are fully combined. Season with salt and pepper.
- Pour the beaten eggs into the skillet and scramble until they're just set, but still a little bit runny. Remove from heat.
- Warm up the black beans and tortillas.
- Place the scrambled eggs in the center of each tortilla. Top with cheddar cheese, black beans, diced avocado, salsa, and cilantro.
- Fold the sides of the tortilla over the fillings, then roll the burrito up from the bottom.
- Serve immediately, with extra salsa on the side if desired.
