
Easy Mediterranean Fish for Midnight Cravings

Ingredients:
- 2 pieces White Fish Fillets (like Cod or Hake)
- 2 tablespoons Olive Oil
- 2 cloves Garlic
- 1 cup Cherry Tomatoes
- 1/2 cup Kalamata Olives
- 1/4 cup Fresh Basil
- 1 piece Lemon
- to taste Salt and Pepper
Instructions:
- Preheat your frying pan over medium heat and add olive oil.
- Season the fish with salt and pepper.
- Once the pan is hot, add fish, cooking for 4 minutes each side or until cooked through. Once cooked, set aside.
- In the same pan, add sliced garlic and cook until it becomes aromatic.
- Add cherry tomatoes and olives to the pan. Cook until the tomatoes start to wilt.
- Place the fish back into the pan, squeeze over the lemon and sprinkle the fresh basil.
- Serve immediately. This dish is great on its own or with a side of fresh bread.
