Easy Mediterranean Fish for Midnight Cravings

Ingredients:

  • 2 pieces White Fish Fillets (like Cod or Hake)
  • 2 tablespoons Olive Oil
  • 2 cloves Garlic
  • 1 cup Cherry Tomatoes
  • 1/2 cup Kalamata Olives
  • 1/4 cup Fresh Basil
  • 1 piece Lemon
  • to taste Salt and Pepper

Instructions:

  1. Preheat your frying pan over medium heat and add olive oil.
  2. Season the fish with salt and pepper.
  3. Once the pan is hot, add fish, cooking for 4 minutes each side or until cooked through. Once cooked, set aside.
  4. In the same pan, add sliced garlic and cook until it becomes aromatic.
  5. Add cherry tomatoes and olives to the pan. Cook until the tomatoes start to wilt.
  6. Place the fish back into the pan, squeeze over the lemon and sprinkle the fresh basil.
  7. Serve immediately. This dish is great on its own or with a side of fresh bread.
