
Easy Late Night Ratatouille

Ingredients:
- 2 tablespoons olive oil
- 2 cloves garlic
- 1 medium onion
- 1 large bell pepper
- 1 medium zucchini
- 1 small eggplant
- 2 medium tomatoes
- handful freshly chopped basil
- to taste salt and pepper
Instructions:
- Heat the oil in a large pan over medium heat.
- Add the minced garlic & diced onion to the pan, cook until softened.
- Add the diced bell pepper, zucchini, eggplant, and a pinch of salt. Stir until the vegetables are tender.
- Add the diced tomatoes and cook for a few more minutes, until the tomatoes start to break down and create a sauce.
- Remove from the heat and stir in the freshly chopped basil. Season with more salt and pepper to taste.
- Serve your Easy Late Night Ratatouille warm, on its own, with crusty bread, over pasta or rice.
