Easy Late Night Ratatouille

Ingredients:

  • 2 tablespoons olive oil
  • 2 cloves garlic
  • 1 medium onion
  • 1 large bell pepper
  • 1 medium zucchini
  • 1 small eggplant
  • 2 medium tomatoes
  • handful freshly chopped basil
  • to taste salt and pepper

Instructions:

  1. Heat the oil in a large pan over medium heat.
  2. Add the minced garlic & diced onion to the pan, cook until softened.
  3. Add the diced bell pepper, zucchini, eggplant, and a pinch of salt. Stir until the vegetables are tender.
  4. Add the diced tomatoes and cook for a few more minutes, until the tomatoes start to break down and create a sauce.
  5. Remove from the heat and stir in the freshly chopped basil. Season with more salt and pepper to taste.
  6. Serve your Easy Late Night Ratatouille warm, on its own, with crusty bread, over pasta or rice.
