Easy Japanese Midnight Egg Rice Bowl

Ingredients:

  • 2 cups Cooked white rice
  • 4 Large eggs
  • 2 teaspoons Sesame oil
  • 1 tablespoon Soy sauce
  • 2 stalks Green onions
  • to taste Nori seaweed strips

Instructions:

  1. Start by heating the sesame oil in a non-stick frying pan on medium heat.
  2. Crack the eggs into the pan and scramble softly.
  3. Once the eggs are half cooked, add the cooked white rice to the pan and mix it with the soft scrambled eggs.
  4. Drizzle the rice and egg mixture with the soy sauce and mix well.
  5. Continue stir-frying for 2-3 minutes until the rice is well mixed and hot.
  6. Remove the pan from heat and divide the egg rice into two serving bowls.
  7. Garnish each bowl with freshly chopped green onions and desired amount of Nori seaweed strips.
