
Easy Italian Breakfast Chicken

Ingredients:
- 2 pieces Chicken breast
- 2 tablespoons Olive oil
- 1 piece Garlic clove
- 1/2 cup cup Cherry tomatoes
- 10 leaves Fresh basil leaves
- to taste Salt
- to taste Black pepper
- 2 pieces Eggs
- 1 cup Grated Parmesan cheese
Instructions:
- Heat oil on medium heat in a large frying pan.
- Add garlic and sauté until translucent.
- Add chicken breast to pan and cook until browned on both sides, around 10 minutes.
- While the chicken is cooking, halve the cherry tomatoes and chop the basil leaves.
- Once chicken is cooked, remove it from the pan and set aside.
- In the same pan, crack eggs into the remaining oil and cook to your preferred level.
- Place the cooked chicken on a plate, top with fried eggs, cherry tomatoes, grated Parmesan, fresh basil, salt and pepper.
