Easy Italian Breakfast Chicken

Ingredients:

  • 2 pieces Chicken breast
  • 2 tablespoons Olive oil
  • 1 piece Garlic clove
  • 1/2 cup cup Cherry tomatoes
  • 10 leaves Fresh basil leaves
  • to taste Salt
  • to taste Black pepper
  • 2 pieces Eggs
  • 1 cup Grated Parmesan cheese

Instructions:

  1. Heat oil on medium heat in a large frying pan.
  2. Add garlic and sauté until translucent.
  3. Add chicken breast to pan and cook until browned on both sides, around 10 minutes.
  4. While the chicken is cooking, halve the cherry tomatoes and chop the basil leaves.
  5. Once chicken is cooked, remove it from the pan and set aside.
  6. In the same pan, crack eggs into the remaining oil and cook to your preferred level.
  7. Place the cooked chicken on a plate, top with fried eggs, cherry tomatoes, grated Parmesan, fresh basil, salt and pepper.
