Easy Indian Egg Curry

Ingredients:

  • 4 whole Eggs
  • 1 large Onion
  • 2 medium Tomato
  • 2 cloves Garlic
  • 1/2 teaspoon Cumin seeds
  • 1 tablespoon Curry powder
  • 1/2 teaspoon Chili powder
  • 1/4 teaspoon Turmeric powder
  • to taste Salt
  • 2 tablespoons Vegetable oil
  • 1 cup Water
  • for garnish Fresh coriander leaves

Instructions:

  1. Boil the eggs in a sauce pan for 10 minutes, then peel and set aside.
  2. Meanwhile, finely chop the onion, tomatoes and garlic.
  3. Heat the oil in a large skillet over medium heat. Add the cumin seeds and let them crackle for a few seconds.
  4. Add the chopped onions and garlic to the skillet and sauté until the onions become translucent.
  5. Add the chopped tomatoes, curry powder, chili powder, turmeric powder, and salt. Mix well and cook until the tomatoes are soft and the spices are well blended.
  6. Add the water and bring the mixture to a boil. Reduce the heat to low, add the boiled eggs, and let it simmer for 5 minutes.
  7. Garnish the curry with the fresh coriander leaves and serve hot. This spicy and delicious Indian egg curry is perfect for your midnight cravings.
