
Easy Indian Egg Curry

Ingredients:
- 4 whole Eggs
- 1 large Onion
- 2 medium Tomato
- 2 cloves Garlic
- 1/2 teaspoon Cumin seeds
- 1 tablespoon Curry powder
- 1/2 teaspoon Chili powder
- 1/4 teaspoon Turmeric powder
- to taste Salt
- 2 tablespoons Vegetable oil
- 1 cup Water
- for garnish Fresh coriander leaves
Instructions:
- Boil the eggs in a sauce pan for 10 minutes, then peel and set aside.
- Meanwhile, finely chop the onion, tomatoes and garlic.
- Heat the oil in a large skillet over medium heat. Add the cumin seeds and let them crackle for a few seconds.
- Add the chopped onions and garlic to the skillet and sauté until the onions become translucent.
- Add the chopped tomatoes, curry powder, chili powder, turmeric powder, and salt. Mix well and cook until the tomatoes are soft and the spices are well blended.
- Add the water and bring the mixture to a boil. Reduce the heat to low, add the boiled eggs, and let it simmer for 5 minutes.
- Garnish the curry with the fresh coriander leaves and serve hot. This spicy and delicious Indian egg curry is perfect for your midnight cravings.
