Dinner Thai Comfort Pasta

Ingredients:

  • 8 ounces Spaghetti Pasta
  • 2 tablespoons Vegetable Oil
  • 4 cloves, minced Garlic
  • 2 cups, chopped Chicken Breast
  • 2 cups, diced Bell Peppers (Red and Green)
  • 3 tablespoons Thai red curry paste
  • 1 can Coconut milk
  • 2 tablespoons Fish sauce
  • 1 tablespoon Brown sugar
  • 1/2 cup Thai basil leaves
  • 1 for garnish Lime wedges

Instructions:

  1. Boil a pot of water and cook the spaghetti pasta according to package instructions. Drain and set aside.
  2. Heat oil in a large skillet over medium heat. Add the minced garlic and cook until fragrant.
  3. Add the chopped chicken to the skillet and cook until it is no longer pink.
  4. Add the diced bell peppers and stir-fry until they softened.
  5. Stir in the Thai red curry paste, followed by the coconut milk, fish sauce and brown sugar. Stir to combine and let it simmer for about 10 minutes.
  6. Add the cooked pasta into the skillet and toss to combine. Let it cook for another 2-3 minutes until everything is heated through.
  7. Stir in the Thai basil leaves and turn off the heat.
  8. Serve the pasta with some lime wedges on the side for garnishing.
