
Dinner Thai Comfort Pasta

Ingredients:
- 8 ounces Spaghetti Pasta
- 2 tablespoons Vegetable Oil
- 4 cloves, minced Garlic
- 2 cups, chopped Chicken Breast
- 2 cups, diced Bell Peppers (Red and Green)
- 3 tablespoons Thai red curry paste
- 1 can Coconut milk
- 2 tablespoons Fish sauce
- 1 tablespoon Brown sugar
- 1/2 cup Thai basil leaves
- 1 for garnish Lime wedges
Instructions:
- Boil a pot of water and cook the spaghetti pasta according to package instructions. Drain and set aside.
- Heat oil in a large skillet over medium heat. Add the minced garlic and cook until fragrant.
- Add the chopped chicken to the skillet and cook until it is no longer pink.
- Add the diced bell peppers and stir-fry until they softened.
- Stir in the Thai red curry paste, followed by the coconut milk, fish sauce and brown sugar. Stir to combine and let it simmer for about 10 minutes.
- Add the cooked pasta into the skillet and toss to combine. Let it cook for another 2-3 minutes until everything is heated through.
- Stir in the Thai basil leaves and turn off the heat.
- Serve the pasta with some lime wedges on the side for garnishing.
