
Curry Spiced Pasta with Exotic Toppings

Ingredients:
- 500 grams Pasta
- 2 tablespoons Olive oil
- 1 large Onion
- 3 cloves Garlic
- 1 teaspoon Red chili powder
- 1/2 teaspoon Turmeric powder
- 1 teaspoon Coriander powder
- 1/2 teaspoon Cumin powder
- 1 teaspoon Garam masala powder
- 2 medium Tomatoes
- 1/2 cup Fresh coriander leaves
- 1 cup Coconut milk
- 2 tablespoons Coconut flakes
- 1 medium Mango
- to taste Salt
Instructions:
- Cook pasta al dente according to package instructions. Drain and set aside.
- Heat the olive oil in a large pan over medium heat.
- Saute the finely chopped onion and minced garlic in the olive oil until onion is golden brown.
- Add the chili powder, turmeric, coriander powder, cumin, garam masala to the pan and mix well.
- Add in diced tomatoes and cook until they begin to break down and form a sauce.
- Stir in the coconut milk and let the sauce simmer for around 10 minutes.
- Add the cooked pasta to the pan and toss it in the sauce until well coated.
- Season the pasta with salt and add finely chopped fresh coriander leaves.
- To make the dish exotic, top the pasta with fresh mango cubes and sprinkle with toasted coconut flakes before serving.
