Curry Spiced Pasta with Exotic Toppings

Ingredients:

  • 500 grams Pasta
  • 2 tablespoons Olive oil
  • 1 large Onion
  • 3 cloves Garlic
  • 1 teaspoon Red chili powder
  • 1/2 teaspoon Turmeric powder
  • 1 teaspoon Coriander powder
  • 1/2 teaspoon Cumin powder
  • 1 teaspoon Garam masala powder
  • 2 medium Tomatoes
  • 1/2 cup Fresh coriander leaves
  • 1 cup Coconut milk
  • 2 tablespoons Coconut flakes
  • 1 medium Mango
  • to taste Salt

Instructions:

  1. Cook pasta al dente according to package instructions. Drain and set aside.
  2. Heat the olive oil in a large pan over medium heat.
  3. Saute the finely chopped onion and minced garlic in the olive oil until onion is golden brown.
  4. Add the chili powder, turmeric, coriander powder, cumin, garam masala to the pan and mix well.
  5. Add in diced tomatoes and cook until they begin to break down and form a sauce.
  6. Stir in the coconut milk and let the sauce simmer for around 10 minutes.
  7. Add the cooked pasta to the pan and toss it in the sauce until well coated.
  8. Season the pasta with salt and add finely chopped fresh coriander leaves.
  9. To make the dish exotic, top the pasta with fresh mango cubes and sprinkle with toasted coconut flakes before serving.
