Creamy Breakfast Macaroni and Cheese

Ingredients:

  • 8 ounces Elbow macaroni
  • 2 tablespoons Unsalted butter
  • 2 tablespoons All-purpose flour
  • 2 cups Whole milk
  • 1.5 cups Shredded sharp cheddar cheese
  • 1/2 cup Grated Parmesan cheese
  • 1/2 teaspoon Salt
  • 1/4 teaspoon Ground black pepper
  • 6 n/a Bacon strips
  • 1 tablespoon Chopped fresh parsley

Instructions:

  1. Cook macaroni according to the package instructions. Drain and set aside.
  2. While the macaroni is cooking, fry the bacon in a pan until crispy. Remove from pan, crumble, and set aside.
  3. In a large pot, melt butter over medium heat. Stir in flour until smoothly combined.
  4. Gradually whisk in milk. Continue cooking, whisking constantly until the mixture thickens and comes to a simmer.
  5. Lower the heat, then add in the cheddar and Parmesan cheese, salt, and pepper. Stir until the cheeses are fully melted.
  6. Add cooked macaroni to the pot and stir until well coated in the cheese sauce.
  7. Stir in the crumbled bacon, reserving a bit for garnish.
  8. Serve the macaroni in bowls, garnished with the remaining bacon and parsley.
