
Creamy Breakfast Macaroni and Cheese

Ingredients:
- 8 ounces Elbow macaroni
- 2 tablespoons Unsalted butter
- 2 tablespoons All-purpose flour
- 2 cups Whole milk
- 1.5 cups Shredded sharp cheddar cheese
- 1/2 cup Grated Parmesan cheese
- 1/2 teaspoon Salt
- 1/4 teaspoon Ground black pepper
- 6 n/a Bacon strips
- 1 tablespoon Chopped fresh parsley
Instructions:
- Cook macaroni according to the package instructions. Drain and set aside.
- While the macaroni is cooking, fry the bacon in a pan until crispy. Remove from pan, crumble, and set aside.
- In a large pot, melt butter over medium heat. Stir in flour until smoothly combined.
- Gradually whisk in milk. Continue cooking, whisking constantly until the mixture thickens and comes to a simmer.
- Lower the heat, then add in the cheddar and Parmesan cheese, salt, and pepper. Stir until the cheeses are fully melted.
- Add cooked macaroni to the pot and stir until well coated in the cheese sauce.
- Stir in the crumbled bacon, reserving a bit for garnish.
- Serve the macaroni in bowls, garnished with the remaining bacon and parsley.
