Cozy Italian Fish Stew

Ingredients:

  • 2 tablespoons Olive oil
  • 1 medium, chopped Onion
  • 4 minced Garlic cloves
  • 1/2 teaspoon Red pepper flakes
  • 1 15-ounce can Canned diced tomatoes
  • 1.5 cups Chicken or fish stock
  • 1 cup White wine
  • to taste teaspoons Salt
  • to taste teaspoons Black pepper
  • 4 medium-sized Fish fillets
  • Handful chopped Parsley

Instructions:

  1. Heat olive oil in a large pot over medium heat. Add the chopped onion and minced garlic to the pot and sauté until the onions become translucent.
  2. Add the red pepper flakes to the pot and stir to mix well.
  3. Stir in the diced tomatoes, chicken or fish stock, and white wine. Season the mixture with salt and black pepper to taste.
  4. Bring the stew to a simmer and let it cook for about 15 minutes to allow the flavors to meld together.
  5. Place the fish fillets in the simmering stew and let them cook for another 10 minutes, or until the fish is cooked through and easily flakes with a fork.
  6. Stir in the chopped parsley and remove the stew from the heat.
  7. Serve the stew warm with crusty bread or over cooked pasta if desired.
