
Cozy Italian Fish Stew

Ingredients:
- 2 tablespoons Olive oil
- 1 medium, chopped Onion
- 4 minced Garlic cloves
- 1/2 teaspoon Red pepper flakes
- 1 15-ounce can Canned diced tomatoes
- 1.5 cups Chicken or fish stock
- 1 cup White wine
- to taste teaspoons Salt
- to taste teaspoons Black pepper
- 4 medium-sized Fish fillets
- Handful chopped Parsley
Instructions:
- Heat olive oil in a large pot over medium heat. Add the chopped onion and minced garlic to the pot and sauté until the onions become translucent.
- Add the red pepper flakes to the pot and stir to mix well.
- Stir in the diced tomatoes, chicken or fish stock, and white wine. Season the mixture with salt and black pepper to taste.
- Bring the stew to a simmer and let it cook for about 15 minutes to allow the flavors to meld together.
- Place the fish fillets in the simmering stew and let them cook for another 10 minutes, or until the fish is cooked through and easily flakes with a fork.
- Stir in the chopped parsley and remove the stew from the heat.
- Serve the stew warm with crusty bread or over cooked pasta if desired.
