
Cozy French Seafood Chowder

Ingredients:
- 2 tablespoons Butter
- 1 medium, finely chopped Onion
- 2 cloves, minced Garlic
- 2 tablespoons All-purpose flour
- 4 cups Fish stock
- 3 medium, peeled and diced Potatoes
- 1 Bay leaf
- 1 pound Mixed seafood
- 1 cup Heavy cream
- 1/2 cup White wine
- to taste Salt and pepper
- for garnish Parsley
Instructions:
- In a large pot, melt the butter over medium heat. Add the onion and garlic, stirring until softened.
- Stir in the flour to make a roux, and cook for another couple of minutes.
- Gradually add the fish stock, stirring continuously until the soup is smooth.
- Add the potatoes, bay leaf, and wine. Bring to a boil, then reduce to a simmer and cook until the potatoes are tender, about 20 minutes.
- Add the mixed seafood, and simmer another 10 minutes, or until the fish is cooked through.
- Stir in the cream, then season with salt and pepper.
- Ladle the chowder into bowls, garnish with parsley, and serve warm with crusty bread on the side.
