Cozy French Seafood Chowder

Ingredients:

  • 2 tablespoons Butter
  • 1 medium, finely chopped Onion
  • 2 cloves, minced Garlic
  • 2 tablespoons All-purpose flour
  • 4 cups Fish stock
  • 3 medium, peeled and diced Potatoes
  • 1 Bay leaf
  • 1 pound Mixed seafood
  • 1 cup Heavy cream
  • 1/2 cup White wine
  • to taste Salt and pepper
  • for garnish Parsley

Instructions:

  1. In a large pot, melt the butter over medium heat. Add the onion and garlic, stirring until softened.
  2. Stir in the flour to make a roux, and cook for another couple of minutes.
  3. Gradually add the fish stock, stirring continuously until the soup is smooth.
  4. Add the potatoes, bay leaf, and wine. Bring to a boil, then reduce to a simmer and cook until the potatoes are tender, about 20 minutes.
  5. Add the mixed seafood, and simmer another 10 minutes, or until the fish is cooked through.
  6. Stir in the cream, then season with salt and pepper.
  7. Ladle the chowder into bowls, garnish with parsley, and serve warm with crusty bread on the side.
