Cozy French Seafood Bouillabaisse

Ingredients:

  • 2 tablespoon Olive oil
  • 1 large Onion
  • 2 large Garlic cloves
  • 500 grams Fish fillets
  • 200 grams Shrimps
  • 250 grams Mussels
  • 2 large Tomatoes
  • 1 litre Fish stock
  • 1 pinch Saffron
  • to taste Salt and pepper
  • as needed Crusty bread

Instructions:

  1. Heat the olive oil in a pot over medium heat. Add the chopped onion and garlic, and sauté until softened.
  2. Add the tomatoes, chopped into quarters, and cook until broken down.
  3. Add the fish stock and saffron, and bring to a simmer.
  4. Season the fish with salt and pepper, and add it to the pot. Cook for about 10 minutes or until nearly cooked through.
  5. Add the shrimps and mussels to the pot. Continue to cook until the fish is cooked thoroughly and the mussels have opened. Discard any mussels that do not open.
  6. Taste and adjust seasoning with additional salt and pepper if needed.
  7. Ladle the bouillabaisse into bowls, and serve with crusty bread on the side.
