
Cozy French Seafood Bouillabaisse

Ingredients:
- 2 tablespoon Olive oil
- 1 large Onion
- 2 large Garlic cloves
- 500 grams Fish fillets
- 200 grams Shrimps
- 250 grams Mussels
- 2 large Tomatoes
- 1 litre Fish stock
- 1 pinch Saffron
- to taste Salt and pepper
- as needed Crusty bread
Instructions:
- Heat the olive oil in a pot over medium heat. Add the chopped onion and garlic, and sauté until softened.
- Add the tomatoes, chopped into quarters, and cook until broken down.
- Add the fish stock and saffron, and bring to a simmer.
- Season the fish with salt and pepper, and add it to the pot. Cook for about 10 minutes or until nearly cooked through.
- Add the shrimps and mussels to the pot. Continue to cook until the fish is cooked thoroughly and the mussels have opened. Discard any mussels that do not open.
- Taste and adjust seasoning with additional salt and pepper if needed.
- Ladle the bouillabaisse into bowls, and serve with crusty bread on the side.
