Cozy French Chicken Cassoulet

Ingredients:

  • 8 pieces Chicken thighs
  • 2 cans Cannellini beans
  • 1 large Carrot
  • 1 large Onion
  • 3 cloves Garlic cloves
  • 2 tablespoons Tomato puree
  • 500 ml Chicken stock
  • 2 leaves Bay leaves
  • 1 bunch Fresh Thyme
  • 2 tablespoons Olive oil
  • to taste Salt and Pepper

Instructions:

  1. Preheat the oven to 180C/160C Fan/Gas 4.
  2. Heat the oil in a large, lidded casserole dish over a medium heat. Add the chicken thighs and fry for 10–15 minutes, or until browned all over. Remove from the dish and set aside.
  3. Add the onion, carrot and garlic to the dish and fry for 2–3 minutes, or until softened.
  4. Add the tomato purée, cannellini beans, chicken stock, bay leaves and thyme. Stir well to combine.
  5. Return the chicken to the dish, pushing them under the liquid. Cover with the lid.
  6. Transfer the dish to the oven and cook for 1 hour, or until the chicken is cooked through and the sauce is rich and thick.
  7. Remove from the oven and season, to taste, with salt and pepper. Discard the bay leaves and thyme stalks before serving.
