Cozy French Chicken Cassoulet

Ingredients:
- 8 pieces Chicken thighs
- 2 cans Cannellini beans
- 1 large Carrot
- 1 large Onion
- 3 cloves Garlic cloves
- 2 tablespoons Tomato puree
- 500 ml Chicken stock
- 2 leaves Bay leaves
- 1 bunch Fresh Thyme
- 2 tablespoons Olive oil
- to taste Salt and Pepper
Instructions:
- Preheat the oven to 180C/160C Fan/Gas 4.
- Heat the oil in a large, lidded casserole dish over a medium heat. Add the chicken thighs and fry for 10–15 minutes, or until browned all over. Remove from the dish and set aside.
- Add the onion, carrot and garlic to the dish and fry for 2–3 minutes, or until softened.
- Add the tomato purée, cannellini beans, chicken stock, bay leaves and thyme. Stir well to combine.
- Return the chicken to the dish, pushing them under the liquid. Cover with the lid.
- Transfer the dish to the oven and cook for 1 hour, or until the chicken is cooked through and the sauce is rich and thick.
- Remove from the oven and season, to taste, with salt and pepper. Discard the bay leaves and thyme stalks before serving.
