Cozy Chinese Chicken Noodle Soup

Ingredients:

  • 1 piece Whole chicken
  • 2-inch piece fresh ginger
  • 6 stems scallions
  • 2 tablespoons soy sauce
  • 200 grams chinese egg noodles
  • 200 grams shiitake mushrooms
  • 2 heads bok choy
  • 1 teaspoon salt
  • 0.5 teaspoon pepper

Instructions:

  1. Place the whole chicken in a large soup pot, cover with water and bring to a boil.
  2. Add the ginger, half of the scallions, soy sauce, salt and pepper. Reduce heat to low, cover and simmer for about an hour.
  3. Remove the chicken and allow to cool. Shred the chicken and set aside.
  4. Strain the stock to remove the ginger and scallions. Return the stock to the pot.
  5. Add the mushrooms to the stock and simmer for 10 minutes.
  6. In a separate pot, cook the noodles according to package instructions.
  7. While the noodles are cooking, chop the bok choy and remaining scallions.
  8. Add the bok choy, scallions, and shredded chicken to the soup pot and simmer for additional 5-10 minutes.
  9. To serve, divide the noodles among bowls and ladle the soup on top. Enjoy this heart-warming cozy chicken soup!.
