Cozy Chinese Chicken Noodle Soup

Ingredients:
- 1 piece Whole chicken
- 2-inch piece fresh ginger
- 6 stems scallions
- 2 tablespoons soy sauce
- 200 grams chinese egg noodles
- 200 grams shiitake mushrooms
- 2 heads bok choy
- 1 teaspoon salt
- 0.5 teaspoon pepper
Instructions:
- Place the whole chicken in a large soup pot, cover with water and bring to a boil.
- Add the ginger, half of the scallions, soy sauce, salt and pepper. Reduce heat to low, cover and simmer for about an hour.
- Remove the chicken and allow to cool. Shred the chicken and set aside.
- Strain the stock to remove the ginger and scallions. Return the stock to the pot.
- Add the mushrooms to the stock and simmer for 10 minutes.
- In a separate pot, cook the noodles according to package instructions.
- While the noodles are cooking, chop the bok choy and remaining scallions.
- Add the bok choy, scallions, and shredded chicken to the soup pot and simmer for additional 5-10 minutes.
