Coq au Vin (French Chicken Stew)

Ingredients:

  • 8 pieces Chicken pieces (legs, thighs, breasts)
  • 2 tablespoons Olive oil
  • 2 tablespoons Butter
  • 1 large, chopped Onion
  • 2 medium, chopped Carrots
  • 3 cloves, minced Garlic cloves
  • 6 slices, cut into pieces Bacon strips
  • 200 grams, sliced Button mushrooms
  • 4 sprigs Fresh thyme
  • 2 leaves Bay leaves
  • 750 ml bottle Dry red wine
  • 2 cups Chicken broth
  • to taste Salt and black pepper
  • 1 handful, chopped (for garnish) Fresh parsley

Instructions:

  1. In a large Dutch oven or heavy-bottomed pot, heat the olive oil over medium heat. Add the chicken pieces, seasoning them with salt and pepper. Cook until browned on all sides. Remove from pot and set aside.
  2. In the same pot, add the butter and melt it over medium heat. Add the chopped onions, carrots, and garlic, cooking until vegetables are softened.
  3. Add the bacon pieces to the pot and cook until they start to brown. Then add the sliced mushrooms to the pot and cook until they start to brown.
  4. Add the thyme sprigs and bay leaves to the pot. Pour in the wine, stirring gently to deglaze the pot. Add chicken broth and return the chicken pieces to the pot.
  5. Let the stew come to a boil, then turn down the heat and let it simmer for 1.5 hours or until the chicken is tender. Check and stir occasionally.
  6. Serve hot, garnishing with chopped parsley. Enjoy this comforting French classic with a side of crusty bread.
