
Comforting Pineapple Chicken

Ingredients:
- 2 pieces Chicken breast
- 1 fruit Fresh pineapple
- 1 tablespoon Ginger
- 2 cloves Garlic
- 3 tablespoons Soy sauce
- 2 tablespoons Brown sugar
- 2 tablespoons Vegetable oil
- 1 tablespoon Cornstarch
- 3 stalks Green onions
- to taste Toast sesame seeds
Instructions:
- Slice the chicken breasts into strips or cubes. Set aside.
- Peel the pineapple and cut it into bite-sized chunks.
- Heat the vegetable oil in a large pan or wok over medium heat.
- Add the chicken pieces to the pan and cook until they are browned on all sides.
- While the chicken is cooking, mince the garlic and ginger. Slice the green onions into thin rings.
- Add the garlic, ginger, and half of the green onions to the pan with the chicken. Stir everything together and cook for another minute.
- In a small bowl, mix together the soy sauce, brown sugar, and cornstarch. Pour this mixture into the pan with the chicken.
- Add the pineapple chunks to the pan. Stir everything together and let it cook for 10-15 minutes, or until the sauce has thickened and the pineapple is heated through.
- Serve the pineapple chicken hot, sprinkled with the remaining green onions and the toasted sesame seeds.
