Comforting Pineapple Chicken

Ingredients:

  • 2 pieces Chicken breast
  • 1 fruit Fresh pineapple
  • 1 tablespoon Ginger
  • 2 cloves Garlic
  • 3 tablespoons Soy sauce
  • 2 tablespoons Brown sugar
  • 2 tablespoons Vegetable oil
  • 1 tablespoon Cornstarch
  • 3 stalks Green onions
  • to taste Toast sesame seeds

Instructions:

  1. Slice the chicken breasts into strips or cubes. Set aside.
  2. Peel the pineapple and cut it into bite-sized chunks.
  3. Heat the vegetable oil in a large pan or wok over medium heat.
  4. Add the chicken pieces to the pan and cook until they are browned on all sides.
  5. While the chicken is cooking, mince the garlic and ginger. Slice the green onions into thin rings.
  6. Add the garlic, ginger, and half of the green onions to the pan with the chicken. Stir everything together and cook for another minute.
  7. In a small bowl, mix together the soy sauce, brown sugar, and cornstarch. Pour this mixture into the pan with the chicken.
  8. Add the pineapple chunks to the pan. Stir everything together and let it cook for 10-15 minutes, or until the sauce has thickened and the pineapple is heated through.
  9. Serve the pineapple chicken hot, sprinkled with the remaining green onions and the toasted sesame seeds.
