Comforting Mexican Pork Tacos

Ingredients:

  • 2 lbs Pork shoulder
  • 1 Onion
  • 4 cloves Garlic
  • 1 bunch Cilantro
  • 2 cans Chipotle peppers in adobo sauce
  • 2 cups Chicken broth
  • 1 tsp Cumin
  • 1 tsp Oregano
  • to taste Salt
  • to taste Pepper
  • 12 Corn tortillas
  • 1 Lime
  • as needed Guacamole

Instructions:

  1. Chop the onion and cilantro, and mince the garlic.
  2. In a slow cooker, add the pork shoulder, onion, garlic, chopped cilantro, chipotle peppers, chicken broth, cumin, oregano, salt, and pepper.
  3. Set the slow cooker on low for 6 hours.
  4. After 6 hours, shred the pork using two forks. Mix it well with the sauce in the slow cooker.
  5. Heat the corn tortillas on a griddle or over the stove until they are slightly charred.
  6. Serve the shredded meat in the heated tortillas, top with guacamole, and a squeeze of lime. Enjoy your comforting Mexican pork tacos!
