
Comforting Mexican Fish Tacos

Ingredients:
- 4 pieces White fish fillets
- 12 pieces Taco shells
- 1 piece Lime
- 2 tbsp Olive oil
- 1 tsp Cumin
- 1 tsp Chili powder
- 1 piece Garlic clove
- 0.5 tsp Salt
- 0.25 tsp Pepper
- 1 cup Red Cabbage
- 2 stalks Green Onion
- 0.5 cup Cilantro leaves
- 1 piece Tomato
- 0.5 cup Sour cream
Instructions:
- In a bowl, combine oil, cumin, chili powder, minced garlic, salt and pepper. Squeeze in the juice of half the lime.
- Coat the fish fillets in the mixture and let marinate for 15 minutes.
- While the fish is marinating, chop the red cabbage, green onion, cilantro leaves and tomato for garnish.
- Heat a skillet over medium heat. Once hot, add the fish fillets and cook for 3-4 minutes on each side, until cooked through.
- Warm the taco shells in the oven as per package instructions.
- Assemble the tacos by adding a spoonful of sour cream on the shell, followed by the fish, and topping with cabbage, tomato, green onion, and cilantro.
- Finish with another squeeze of lime juice and serve immediately.
