Comforting Mexican Fish Tacos

Ingredients:

  • 4 pieces White fish fillets
  • 12 pieces Taco shells
  • 1 piece Lime
  • 2 tbsp Olive oil
  • 1 tsp Cumin
  • 1 tsp Chili powder
  • 1 piece Garlic clove
  • 0.5 tsp Salt
  • 0.25 tsp Pepper
  • 1 cup Red Cabbage
  • 2 stalks Green Onion
  • 0.5 cup Cilantro leaves
  • 1 piece Tomato
  • 0.5 cup Sour cream

Instructions:

  1. In a bowl, combine oil, cumin, chili powder, minced garlic, salt and pepper. Squeeze in the juice of half the lime.
  2. Coat the fish fillets in the mixture and let marinate for 15 minutes.
  3. While the fish is marinating, chop the red cabbage, green onion, cilantro leaves and tomato for garnish.
  4. Heat a skillet over medium heat. Once hot, add the fish fillets and cook for 3-4 minutes on each side, until cooked through.
  5. Warm the taco shells in the oven as per package instructions.
  6. Assemble the tacos by adding a spoonful of sour cream on the shell, followed by the fish, and topping with cabbage, tomato, green onion, and cilantro.
  7. Finish with another squeeze of lime juice and serve immediately.
