
Comforting Italian Fish Stew

Ingredients:
- 500 grams White Fish (like cod or halibut)
- 2 pieces Garlic Cloves
- 1 large Onion
- 400 grams Canned Tomatoes
- 500 ml Fish Stock
- 1 piece Red chilli (optional)
- Handful chopped Parsley
- to taste Salt
- to taste Pepper
- 2 tbsp Olive oil
Instructions:
- Heat up the olive oil in a large pan on medium heat.
- Peel and dice the onion, and mince the garlic. Add both to the pan, let them sweat until the onion becomes translucent.
- Add the tinned tomatoes to the pan, bring to a simmer.
- Add the fish stock to the pan, let it simmer for around 10 minutes until it reduces slightly.
- While the stew is simmering, clean the fish and cut into cubes. Add the salt, pepper, and optional chillies.
- Add the fish into the pan, stir gently so not to break up the fish. Let it simmer for around 20 minutes, until the fish is cooked through.
- When the fish is cooked, top the stew with a handful of chopped fresh parsley before serving. Serve this Italian Fish Stew with fresh, warm crusty bread.
