Comforting French Fish Stew

Ingredients:

  • 1 Kilogram Fish fillets (Cod or Haddock preferred)
  • 1 Cup Fish stock
  • 1/2 Cup White wine
  • 3 Potatoes
  • 1 Onion
  • 2 Cloves Garlic
  • 2 Tomatoes
  • 2 Bay leaves
  • 2 Tablespoons Olive oil
  • To taste Salt and pepper
  • 1 bunch Fresh parsley

Instructions:

  1. Start by chopping the onion, garlic, and tomatoes. Peel the potatoes and cut them into cubes.
  2. In a large pot, heat up the olive oil. Once hot, add in the onion and garlic. Sauté until they turn soft and golden.
  3. Add the tomatoes and potatoes to the pot. Stir well, and then pour in the fish stock and white wine.
  4. Add the bay leaves, and seasoned it with salt and pepper. Cover the pot and let it simmer for about 20 minutes until the potatoes are tender.
  5. Cut the fish fillets into sizeable chunks and add them to the pot. Let it cook for another 10 minutes until the fish is cooked through.
  6. Taste and adjust the seasoning if needed. Finally, sprinkle fresh chopped parsley over the stew just before serving.
