
Comforting French Fish Stew

Ingredients:
- 1 Kilogram Fish fillets (Cod or Haddock preferred)
- 1 Cup Fish stock
- 1/2 Cup White wine
- 3 Potatoes
- 1 Onion
- 2 Cloves Garlic
- 2 Tomatoes
- 2 Bay leaves
- 2 Tablespoons Olive oil
- To taste Salt and pepper
- 1 bunch Fresh parsley
Instructions:
- Start by chopping the onion, garlic, and tomatoes. Peel the potatoes and cut them into cubes.
- In a large pot, heat up the olive oil. Once hot, add in the onion and garlic. Sauté until they turn soft and golden.
- Add the tomatoes and potatoes to the pot. Stir well, and then pour in the fish stock and white wine.
- Add the bay leaves, and seasoned it with salt and pepper. Cover the pot and let it simmer for about 20 minutes until the potatoes are tender.
- Cut the fish fillets into sizeable chunks and add them to the pot. Let it cook for another 10 minutes until the fish is cooked through.
- Taste and adjust the seasoning if needed. Finally, sprinkle fresh chopped parsley over the stew just before serving.
