Comforting Chinese Fried Rice

Ingredients:

  • 2 cups Long-grain white rice
  • 2 tbsp Vegetable oil
  • 1 small White onion
  • 1 cup Frozen peas and carrots
  • 2 cloves Garlic
  • 2 Eggs
  • to taste Soy sauce
  • a drizzle Sesame oil
  • 2 stalks Green onions

Instructions:

  1. Cook the rice according to package instructions. Once done, set aside to cool.
  2. Heat 1 tbsp of vegetable oil in a large skillet or wok over medium heat. Add onions, peas and carrots, and garlic. Stir fry until tender.
  3. Push the vegetables to one side of the skillet. Pour the beaten eggs onto the other side. Scramble the eggs, once cooked mix the eggs with the vegetables.
  4. Add the cooled rice to the skillet. Mix well.
  5. Pour the soy sauce and sesame oil over the top. Stir until combined. Add green onions, mix well.
  6. Serve immediately, warm and comforting Chinese Fried Rice is ready to enjoy!
