
Comforting Chinese Fried Rice

Ingredients:
- 2 cups Long-grain white rice
- 2 tbsp Vegetable oil
- 1 small White onion
- 1 cup Frozen peas and carrots
- 2 cloves Garlic
- 2 Eggs
- to taste Soy sauce
- a drizzle Sesame oil
- 2 stalks Green onions
Instructions:
- Cook the rice according to package instructions. Once done, set aside to cool.
- Heat 1 tbsp of vegetable oil in a large skillet or wok over medium heat. Add onions, peas and carrots, and garlic. Stir fry until tender.
- Push the vegetables to one side of the skillet. Pour the beaten eggs onto the other side. Scramble the eggs, once cooked mix the eggs with the vegetables.
- Add the cooled rice to the skillet. Mix well.
- Pour the soy sauce and sesame oil over the top. Stir until combined. Add green onions, mix well.
- Serve immediately, warm and comforting Chinese Fried Rice is ready to enjoy!
