Comforting Chinese Chicken Stir-fry

Ingredients:

  • 2 pieces Boneless, skinless chicken breasts
  • 4 tablespoons Soy Sauce
  • 2 teaspoons Cornstarch
  • 2 tablespoons Rice Wine or Dry Sherry
  • 2 teaspoons Chopped garlic
  • 1 tablespoon Canola oil
  • 1 cup Chopped carrots
  • 1 cup Chopped bell peppers
  • 1 cup Snow peas
  • 2 cups Cooked white rice

Instructions:

  1. 1. Cut the chicken into small pieces. Then in a bowl, combine chicken, soy sauce, cornstarch, and rice wine or dry sherry. Let it marinate for about 15 minutes.
  2. 2. While the chicken is marinating, prepare your vegetables. Chop garlic, carrots, bell peppers and set aside. Wash snow peas thoroughly.
  3. 3. Heat canola oil in a large skillet or wok on medium-high heat. Add garlic and sauté until fragrant.
  4. 4. Add the marinated chicken to the pan, and stir-fry until it's no longer pink. Remove it from the pan and set it aside.
  5. 5. In the same pan, stir-fry the carrots and bell peppers for about 2 minutes. Add the snow peas, and continue to stir-fry until all the vegetables are just tender.
  6. 6. Return the chicken to the pan with the vegetables. Stir for a minute until everything is well combined and heated through.
  7. 7. Serve the chicken stir-fry over cooked white rice and enjoy your comforting Chinese dinner!
