
Comforting Chinese Chicken Stir-fry

Ingredients:
- 2 pieces Boneless, skinless chicken breasts
- 4 tablespoons Soy Sauce
- 2 teaspoons Cornstarch
- 2 tablespoons Rice Wine or Dry Sherry
- 2 teaspoons Chopped garlic
- 1 tablespoon Canola oil
- 1 cup Chopped carrots
- 1 cup Chopped bell peppers
- 1 cup Snow peas
- 2 cups Cooked white rice
Instructions:
- 1. Cut the chicken into small pieces. Then in a bowl, combine chicken, soy sauce, cornstarch, and rice wine or dry sherry. Let it marinate for about 15 minutes.
- 2. While the chicken is marinating, prepare your vegetables. Chop garlic, carrots, bell peppers and set aside. Wash snow peas thoroughly.
- 3. Heat canola oil in a large skillet or wok on medium-high heat. Add garlic and sauté until fragrant.
- 4. Add the marinated chicken to the pan, and stir-fry until it's no longer pink. Remove it from the pan and set it aside.
- 5. In the same pan, stir-fry the carrots and bell peppers for about 2 minutes. Add the snow peas, and continue to stir-fry until all the vegetables are just tender.
- 6. Return the chicken to the pan with the vegetables. Stir for a minute until everything is well combined and heated through.
- 7. Serve the chicken stir-fry over cooked white rice and enjoy your comforting Chinese dinner!
