
Comforting Chicken Teriyaki Bento

Ingredients:
- 2 pieces Chicken thighs, boneless and skinless
- 2 tablespoons Sugar
- 3 tablespoons Soy sauce
- 2 tablespoons Mirin
- 1 tablespoon Sake
- 1 cup Short grain white rice
- 1.5 cups Water
- to taste Japanese pickles
Instructions:
- Rinse the rice until the water becomes clear and cook in a rice cooker with the water.
- While the rice is cooking, mix the sugar, soy sauce, mirin, and sake in a bowl until the sugar dissolves.
- Heat a pan to medium heat and cook the chicken thighs until browned.
- Pour the teriyaki sauce over the chicken and simmer until the sauce has thickened.
- Transfer the cooked rice and chicken into a bento box and adorn with Japanese pickles.
