Comforting Chicken Teriyaki Bento

Ingredients:

  • 2 pieces Chicken thighs, boneless and skinless
  • 2 tablespoons Sugar
  • 3 tablespoons Soy sauce
  • 2 tablespoons Mirin
  • 1 tablespoon Sake
  • 1 cup Short grain white rice
  • 1.5 cups Water
  • to taste Japanese pickles

Instructions:

  1. Rinse the rice until the water becomes clear and cook in a rice cooker with the water.
  2. While the rice is cooking, mix the sugar, soy sauce, mirin, and sake in a bowl until the sugar dissolves.
  3. Heat a pan to medium heat and cook the chicken thighs until browned.
  4. Pour the teriyaki sauce over the chicken and simmer until the sauce has thickened.
  5. Transfer the cooked rice and chicken into a bento box and adorn with Japanese pickles.
