
Comforting Chicken Enchiladas

Ingredients:
- 1 pound Chicken breasts
- 1 whole Onion
- 2 whole Garlic cloves
- 1 cup Green chiles, canned
- 12 pieces Tortillas
- 2 cups Enchilada sauce
- 3 cups Shredded Cheddar and Monterey cheese blend
- To taste Salt and Pepper
- For garnish Fresh Cilantro
Instructions:
- Preheat oven to 375°F (190°C) and lightly grease a baking dish.
- Place chicken breasts in a pot over medium heat, cover with water, and bring to a simmer. Cook until chicken is cooked through, about 15-20 minutes. Let cool, then shred chicken.
- In a large skillet, heat olive oil and sauté the onions and garlic until soft. Add the shredded chicken, green chiles, salt and pepper, and stir to combine.
- Warm tortillas in microwave or on a skillet to make them easier to roll.
- Place a spoonful of chicken mixture in the center of each tortilla, add a sprinkle of the cheese mixture, roll the tortilla and place seam down in the baking dish. Repeat with the remaining tortillas.
- Pour the enchilada sauce over the rolled tortillas and sprinkle the remaining cheese on top.
- Bake in the preheated oven for 20-25 minutes until the cheese is bubbly and golden.
- Garnish with chopped fresh cilantro before serving.
