Comforting Chicken Enchiladas

Ingredients:

  • 1 pound Chicken breasts
  • 1 whole Onion
  • 2 whole Garlic cloves
  • 1 cup Green chiles, canned
  • 12 pieces Tortillas
  • 2 cups Enchilada sauce
  • 3 cups Shredded Cheddar and Monterey cheese blend
  • To taste Salt and Pepper
  • For garnish Fresh Cilantro

Instructions:

  1. Preheat oven to 375°F (190°C) and lightly grease a baking dish.
  2. Place chicken breasts in a pot over medium heat, cover with water, and bring to a simmer. Cook until chicken is cooked through, about 15-20 minutes. Let cool, then shred chicken.
  3. In a large skillet, heat olive oil and sauté the onions and garlic until soft. Add the shredded chicken, green chiles, salt and pepper, and stir to combine.
  4. Warm tortillas in microwave or on a skillet to make them easier to roll.
  5. Place a spoonful of chicken mixture in the center of each tortilla, add a sprinkle of the cheese mixture, roll the tortilla and place seam down in the baking dish. Repeat with the remaining tortillas.
  6. Pour the enchilada sauce over the rolled tortillas and sprinkle the remaining cheese on top.
  7. Bake in the preheated oven for 20-25 minutes until the cheese is bubbly and golden.
  8. Garnish with chopped fresh cilantro before serving.
