
Comfort Vegetable Ramen

Ingredients:
- 4 servings Ramen noodles
- 8 cups Vegetable broth
- 4 cloves Garlic
- 2 inches Fresh ginger
- 1 tablespoon Soy sauce
- 4 cups Mixed vegetables (e.g., carrots, peas, corn, bell pepper)
- 4 stalks Spring onions
- 1 block Tofu
- 2 tablespoons Sesame oil
- 1 tablespoon Sesame seeds
Instructions:
- Begin by pressing tofu for 15 minutes. Meanwhile, prep your vegetables.
- In a large pot, bring vegetable broth to a simmer. Add minced garlic and ginger to the broth.
- Add soy sauce to the broth and let simmer for 10 minutes, allowing flavors to infuse.
- In a separate pan, heat sesame oil. Add tofu to the pan and cook until browned. Set aside.
- In the same pan, add mixed vegetables and cook until soft.
- Cook the ramen noodles according to the package instructions separately. Drain and set aside.
- Assembly: Divide the ramen noodles into bowls. Pour over the simmering broth. Add the cooked vegetables and tofu. Garnish with chopped spring onions and sesame seeds.
