Ingredients:

  • 4 servings Ramen noodles
  • 8 cups Vegetable broth
  • 4 cloves Garlic
  • 2 inches Fresh ginger
  • 1 tablespoon Soy sauce
  • 4 cups Mixed vegetables (e.g., carrots, peas, corn, bell pepper)
  • 4 stalks Spring onions
  • 1 block Tofu
  • 2 tablespoons Sesame oil
  • 1 tablespoon Sesame seeds

Instructions:

  1. Begin by pressing tofu for 15 minutes. Meanwhile, prep your vegetables.
  2. In a large pot, bring vegetable broth to a simmer. Add minced garlic and ginger to the broth.
  3. Add soy sauce to the broth and let simmer for 10 minutes, allowing flavors to infuse.
  4. In a separate pan, heat sesame oil. Add tofu to the pan and cook until browned. Set aside.
  5. In the same pan, add mixed vegetables and cook until soft.
  6. Cook the ramen noodles according to the package instructions separately. Drain and set aside.
  7. Assembly: Divide the ramen noodles into bowls. Pour over the simmering broth. Add the cooked vegetables and tofu. Garnish with chopped spring onions and sesame seeds.
