
Comfort Thai Pasta

Ingredients:
- 500 grams Pasta
- 1 can Coconut milk
- 3 tablespoons Red curry paste
- 2 pieces Chicken breast
- 2 tablespoons Vegetable oil
- 2 cloves Garlic
- 1 tablespoon Brown sugar
- 1 tablespoon Fish sauce
- 2 whole Limes
- as needed Coriander leaves for garnish
Instructions:
- Cook the pasta in boiling water until al dente. Drain and set aside.
- Heat the oil in a pan over medium-high heat. Add the chicken and cook until it's no longer pink.
- Add the garlic and red curry paste to the pan. Stir until the chicken is well-coated.
- Pour the coconut milk into the pan. Add the brown sugar and fish sauce. Mix well. Let the mixture simmer for about 10 minutes.
- Add the cooked pasta to the pan. Stir to combine.
- Stir in the juice of two limes.
- Garnish with coriander leaves before serving.
