Comfort Thai Pasta

Ingredients:

  • 500 grams Pasta
  • 1 can Coconut milk
  • 3 tablespoons Red curry paste
  • 2 pieces Chicken breast
  • 2 tablespoons Vegetable oil
  • 2 cloves Garlic
  • 1 tablespoon Brown sugar
  • 1 tablespoon Fish sauce
  • 2 whole Limes
  • as needed Coriander leaves for garnish

Instructions:

  1. Cook the pasta in boiling water until al dente. Drain and set aside.
  2. Heat the oil in a pan over medium-high heat. Add the chicken and cook until it's no longer pink.
  3. Add the garlic and red curry paste to the pan. Stir until the chicken is well-coated.
  4. Pour the coconut milk into the pan. Add the brown sugar and fish sauce. Mix well. Let the mixture simmer for about 10 minutes.
  5. Add the cooked pasta to the pan. Stir to combine.
  6. Stir in the juice of two limes.
  7. Garnish with coriander leaves before serving.
