Comfort Seafood Fried Rice

Ingredients:

  • 3 cups Cooked Jasmine Rice
  • 2 cups Mixed Seafood (shrimp, crab, scallops)
  • 0.5 cup Green peas
  • 0.5 cup Carrots
  • 3 stalks Scallions
  • 2 cloves Garlic
  • 2 large Eggs
  • 3 tablespoons Soy Sauce
  • 1 teaspoon Sesame Oil
  • to taste Salt
  • to taste Pepper

Instructions:

  1. Rinse and drain the rice well. Set aside.
  2. Heat a pan over medium heat. Add a bit of oil and sauté the garlic until fragrant.
  3. Add in the mixed seafood and cook until they are cooked through. Remove from pan and set aside.
  4. In the same pan, add a bit more oil and pour in the eggs. Scramble the eggs and cook until they are fully cooked.
  5. Add in the rice, breaking any lumps and mixing it well with the eggs.
  6. Add in the cooked seafood, peas, and chopped carrots. Stir to mix well.
  7. Season with soy sauce, sesame oil, salt, and pepper. Mix everything well.
  8. Add in the chopped scallions, stir to combine all the ingredients.
  9. Your Comfort Seafood Fried Rice is ready to serve!
