Comfort Chinese Chicken Stir Fry

Ingredients:

  • 2 pieces Chicken breast
  • 2 tablespoons Soy Sauce
  • 2 cloves Garlic
  • 1 inch Ginger
  • 4 cups Mixed vegetables (Carrots, bell peppers, snow peas)
  • 2 cups Rice
  • 1 tablespoon Hoison Sauce
  • 1 tablespoon Sesame oil
  • 1 tablespoon Corn starch
  • 1 cup Chicken stock

Instructions:

  1. Prepare the rice according to package instructions and set aside.
  2. Cut the chicken into thin strips, marinate with a tablespoon of soy sauce and a tablespoon of corn starch, set aside.
  3. Heat a tablespoon of sesame oil in a large wok or skillet over medium high heat. Add the chicken and stir fry until cooked through and golden. Remove from the pan and set aside.
  4. In the same pan, add the garlic and ginger, stir for a minute. Add the mixed vegetables and stir fry until tender.
  5. In a small bowl, combine the remaining soy sauce, hoison sauce and chicken stock. Pour it into the pan with the vegetables.
  6. Return the chicken to the pan, stir well to combine, and let it simmer for a couple of minutes until the sauce is thickened.
  7. Serve hot over the prepared rice.
