
Comfort Chinese Chicken Stir Fry

Ingredients:
- 2 pieces Chicken breast
- 2 tablespoons Soy Sauce
- 2 cloves Garlic
- 1 inch Ginger
- 4 cups Mixed vegetables (Carrots, bell peppers, snow peas)
- 2 cups Rice
- 1 tablespoon Hoison Sauce
- 1 tablespoon Sesame oil
- 1 tablespoon Corn starch
- 1 cup Chicken stock
Instructions:
- Prepare the rice according to package instructions and set aside.
- Cut the chicken into thin strips, marinate with a tablespoon of soy sauce and a tablespoon of corn starch, set aside.
- Heat a tablespoon of sesame oil in a large wok or skillet over medium high heat. Add the chicken and stir fry until cooked through and golden. Remove from the pan and set aside.
- In the same pan, add the garlic and ginger, stir for a minute. Add the mixed vegetables and stir fry until tender.
- In a small bowl, combine the remaining soy sauce, hoison sauce and chicken stock. Pour it into the pan with the vegetables.
- Return the chicken to the pan, stir well to combine, and let it simmer for a couple of minutes until the sauce is thickened.
- Serve hot over the prepared rice.
