Comfort Chicken Teriyaki Donburi

Ingredients:

  • 500 grams Chicken thighs
  • 2 cups Japanese short-grain rice
  • 4 tablespoons Soy sauce
  • 3 tablespoons Mirin
  • 2 tablespoons Sugar
  • 2 teaspoons Ginger, minced
  • 1 handful Spring onions, chopped
  • 1 tablespoon Sesame seeds

Instructions:

  1. Cook the Japanese rice according to the package instructions
  2. While the rice is cooking, sauté the chicken thighs until golden
  3. In a separate saucepan, mix the soy sauce, mirin, sugar and ginger and heat until it simmers
  4. Add the cooked chicken to the saucepan and continue to cook on low heat, making sure all the chicken pieces are coated in the sauce
  5. Scoop a portion of rice into a bowl, then layer the saucy chicken on top
  6. Finish it off by sprinkling chopped spring onions and sesame seeds on top
