
Comfort Chicken Teriyaki Donburi

Ingredients:
- 500 grams Chicken thighs
- 2 cups Japanese short-grain rice
- 4 tablespoons Soy sauce
- 3 tablespoons Mirin
- 2 tablespoons Sugar
- 2 teaspoons Ginger, minced
- 1 handful Spring onions, chopped
- 1 tablespoon Sesame seeds
Instructions:
- Cook the Japanese rice according to the package instructions
- While the rice is cooking, sauté the chicken thighs until golden
- In a separate saucepan, mix the soy sauce, mirin, sugar and ginger and heat until it simmers
- Add the cooked chicken to the saucepan and continue to cook on low heat, making sure all the chicken pieces are coated in the sauce
- Scoop a portion of rice into a bowl, then layer the saucy chicken on top
- Finish it off by sprinkling chopped spring onions and sesame seeds on top
