Classic Vegetable Pot Pie

Ingredients:

  • 2 pieces Pie crusts (top and bottom)
  • 2 tablespoons Butter
  • 1 medium Onion
  • 2 minced Garlic cloves
  • 3 tablespoons All-purpose flour
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 2 cups Vegetable broth
  • 4 cups Mixed frozen vegetables
  • 1 cup Milk

Instructions:

  1. Preheat oven to 375 degrees F.
  2. Roll out the bottom pie crust and place in a 9-inch pie dish. Set aside.
  3. Melt the butter in a large skillet over medium heat. Add onions and garlic, cook until onions are translucent.
  4. Stir in the flour, salt, and black pepper until well combined. Pour in the vegetable broth and bring to a simmer. Cook until thickened, about 2 minutes.
  5. Add the frozen mixed vegetables and milk, stir until combined. Let it simmer for another 5 minutes.
  6. Pour the vegetable mixture into the pie crust in the pie dish. Roll out the top crust, place on top of the filling, and seal the edges.
  7. Cut slits in the top crust to allow steam to escape.
  8. Bake in the preheated oven for approximately 40 minutes, or until crust is golden brown.
  9. Allow to cool for 10 minutes before serving. Enjoy your comforting vegetable pot pie!
