
Classic Vegetable Pot Pie

Ingredients:
- 2 pieces Pie crusts (top and bottom)
- 2 tablespoons Butter
- 1 medium Onion
- 2 minced Garlic cloves
- 3 tablespoons All-purpose flour
- 0.5 teaspoon Salt
- 0.25 teaspoon Black pepper
- 2 cups Vegetable broth
- 4 cups Mixed frozen vegetables
- 1 cup Milk
Instructions:
- Preheat oven to 375 degrees F.
- Roll out the bottom pie crust and place in a 9-inch pie dish. Set aside.
- Melt the butter in a large skillet over medium heat. Add onions and garlic, cook until onions are translucent.
- Stir in the flour, salt, and black pepper until well combined. Pour in the vegetable broth and bring to a simmer. Cook until thickened, about 2 minutes.
- Add the frozen mixed vegetables and milk, stir until combined. Let it simmer for another 5 minutes.
- Pour the vegetable mixture into the pie crust in the pie dish. Roll out the top crust, place on top of the filling, and seal the edges.
- Cut slits in the top crust to allow steam to escape.
- Bake in the preheated oven for approximately 40 minutes, or until crust is golden brown.
- Allow to cool for 10 minutes before serving. Enjoy your comforting vegetable pot pie!
