Classic Southern Shrimp and Grits

Ingredients:

  • 4 cups Water
  • 1 cup Grits
  • 2 tbsp Butter
  • 1 cup Cheddar Cheese, shredded
  • 1 tsp Salt
  • 0.5 tsp Pepper
  • 1 pound Shrimp, peeled and deveined
  • 4 slices Bacon, chopped
  • 2 cloves Garlic, minced
  • 2 tbsp Lemon Juice
  • 2 tbsp Parsley, chopped

Instructions:

  1. In a medium pot, bring the water to a boil. Stir in the grits and reduce the heat to low. Cook, stirring occasionally, for 20 minutes or until creamy.
  2. Stir in the butter, cheddar cheese, salt and pepper until well combined. Set aside and keep warm.
  3. In a large skillet, cook the bacon until crispy. Remove from the skillet and set aside, leaving the drippings in the skillet.
  4. Turn heat to medium-high. Add the shrimp to the skillet and cook until pink, about 2-3 minutes each side. Remove from the skillet and set aside.
  5. In the same skillet, add the minced garlic and cook until fragrant, about 1 minute.
  6. Return the cooked shrimp and crispy bacon to the skillet and stir in lemon juice and chopped parsley.
  7. To serve, spoon the warm cheesy grits into bowls and top with the shrimp mixture.
