Classic Italian Pasta Bolognese

Ingredients:
- 2 tbsp Olive oil
- 1 cup Onion, finely chopped
- 1 cup Celery stalks, finely chopped
- 1 cup Carrots, finely chopped
- 2 n/a Garlic cloves, minced
- 1 lb Ground beef
- 28 oz Canned crushed tomatoes
- 1 cup Dry red wine
- 1 n/a Bay leaf
- 1 tsp Salt
- 1 tsp Pepper
- 1 lb Spaghetti Pasta
- 1 cup Parmesan cheese, freshly grated
Instructions:
- Heat the olive oil in a large pot over medium heat. Add onion, celery, carrot, and garlic. Sauté until vegetables are tender, about 10 minutes.
- Increase the heat to high and add ground beef. Stir until cooked and browned. Drain off fat.
- Add crushed tomatoes, wine, and bay leaf to the pot. Season with salt and pepper. Simmer on low heat, stirring occasionally, for 2 hours.
- In the meantime, cook the spaghetti according to its package instructions. Drain well.
- Remove the bay leaf from the sauce and adjust seasoning if needed.
- Toss the cooked pasta with the sauce and serve sprinkled with the freshly grated Parmesan cheese.
