Classic French Seafood Bisque

Ingredients:

  • 200 grams Mixed Seafood (prawns, mussels, squid)
  • 2 tablespoons Unsalted butter
  • 1 medium size Yellow Onion
  • 1 tablespoon All-purpose flour
  • 1/2 cup White wine
  • 2 cups Fish stock
  • 1 cup Heavy cream
  • 2 tablespoons Fresh Parsley
  • to taste Salt and pepper

Instructions:

  1. 1. Melt the butter in a large saucepan, then add the finely chopped onion and cook until soft.
  2. 2. Stir in the flour and cook for a couple of minutes.
  3. 3. Gradually whisk in the wine, ensuring there are no lumps, then the same with the fish stock.
  4. 4. Bring to a simmer and add the mixed seafood. Cook for about five minutes until the seafood is cooked through.
  5. 5. Using a blender, puree the soup until smooth. If it's too thick, add a little more stock or water.
  6. 6. Return to the saucepan, stir in the cream, and season with salt and pepper. Heat gently, don't let it boil, until heated through.
  7. 7. Serve immediately, garnished with fresh parsley. Enjoy your late-night comfort food!
