
Classic French Seafood Bisque

Ingredients:
- 200 grams Mixed Seafood (prawns, mussels, squid)
- 2 tablespoons Unsalted butter
- 1 medium size Yellow Onion
- 1 tablespoon All-purpose flour
- 1/2 cup White wine
- 2 cups Fish stock
- 1 cup Heavy cream
- 2 tablespoons Fresh Parsley
- to taste Salt and pepper
Instructions:
- 1. Melt the butter in a large saucepan, then add the finely chopped onion and cook until soft.
- 2. Stir in the flour and cook for a couple of minutes.
- 3. Gradually whisk in the wine, ensuring there are no lumps, then the same with the fish stock.
- 4. Bring to a simmer and add the mixed seafood. Cook for about five minutes until the seafood is cooked through.
- 5. Using a blender, puree the soup until smooth. If it's too thick, add a little more stock or water.
- 6. Return to the saucepan, stir in the cream, and season with salt and pepper. Heat gently, don't let it boil, until heated through.
- 7. Serve immediately, garnished with fresh parsley. Enjoy your late-night comfort food!
