
Classic French Ratatouille Pasta

Ingredients:
- 3 tbsp Olive Oil
- 1 large Red Onion
- 3 cloves Garlic
- 1 large Red Bell Pepper
- 1 large Zucchini
- 1 large Eggplant
- 1 cup Tomato Sauce
- 1 tsp Dried Thyme
- 1 tsp Dried Rosemary
- 1 tsp Salt
- 1/2 tsp Black Pepper
- 500 grams Pasta
Instructions:
- Heat the olive oil in a large pan over medium heat. Add the chopped onion and garlic and sauté them until they become soft and fragrant.
- Next, add the chopped red bell pepper, zucchini, and eggplant into the pan. Cook them all together until the vegetables are tender.
- Pour in the tomato sauce into the pan. Sprinkle in the thyme, rosemary, salt, and pepper. Stir everything well to combine all the ingredients.
- Allow the mixture to simmer for about 20 minutes, or until the sauce has thickened significantly.
- In the meantime, prepare the pasta according to the package's instructions. Once cooked, drain the pasta and set it aside.
- When the sauce has thickened, pour the cooked pasta into the pan and stir well to evenly coat all of the pasta.
- Serve hot, garnish with some fresh parsley or basil and parmesan cheese, if desired. Bon appétit!
