Classic French Ratatouille Pasta

Ingredients:

  • 3 tbsp Olive Oil
  • 1 large Red Onion
  • 3 cloves Garlic
  • 1 large Red Bell Pepper
  • 1 large Zucchini
  • 1 large Eggplant
  • 1 cup Tomato Sauce
  • 1 tsp Dried Thyme
  • 1 tsp Dried Rosemary
  • 1 tsp Salt
  • 1/2 tsp Black Pepper
  • 500 grams Pasta

Instructions:

  1. Heat the olive oil in a large pan over medium heat. Add the chopped onion and garlic and sauté them until they become soft and fragrant.
  2. Next, add the chopped red bell pepper, zucchini, and eggplant into the pan. Cook them all together until the vegetables are tender.
  3. Pour in the tomato sauce into the pan. Sprinkle in the thyme, rosemary, salt, and pepper. Stir everything well to combine all the ingredients.
  4. Allow the mixture to simmer for about 20 minutes, or until the sauce has thickened significantly.
  5. In the meantime, prepare the pasta according to the package's instructions. Once cooked, drain the pasta and set it aside.
  6. When the sauce has thickened, pour the cooked pasta into the pan and stir well to evenly coat all of the pasta.
  7. Serve hot, garnish with some fresh parsley or basil and parmesan cheese, if desired. Bon appétit!
