Classic French Quiche

Ingredients:

  • 4 whole Eggs
  • 200 ml Single cream
  • 200 g Bacon
  • 200 g Shortcrust pastries
  • 100 g Gruyère cheese
  • to taste Salt
  • to taste Black pepper

Instructions:

  1. Preheat the oven to 180°C (160°C fan) mark 4.
  2. Roll out the pastry on a lightly floured surface and use it to line a 23cm (9in) loose-bottomed tart tin. Chill for 20min.
  3. Line pastry with baking parchment and fill with baking beans. Cook for 15min, then carefully remove parchment and beans and cook for a further 5min until the pastry is golden.
  4. Meanwhile, heat a frying pan and cook the bacon for 5min until golden. Set aside to cool slightly, then mix with the cheese and some seasoning. Spread over the base of the cooked pastry.
  5. Beat together the eggs and cream with some seasoning, then pour over the bacon and cheese.
  6. Cook for 30-35min until just set and golden. Allow to cool in the tin for 10min before removing.
  7. Serve the quiche slightly warm or at room temperature with a green salad.
