
Classic French Beef Tartare

Ingredients:
- 1 pound Beef Tenderloin
- 2 tablespoon Capers
- 1 medium size Shallot
- 2 tablespoon Parsley
- 1 teaspoon Dijon Mustard
- to taste Tabasco Sauce
- to taste Salt
- to taste Pepper
- 1 Egg Yolk
Instructions:
- Make sure the beef tenderloin is very fresh. Freeze it for 30 minutes for easier cutting.
- Finely dice the beef tenderloin, capers and shallot. Chop the parsley as well.
- Combine all the chopped ingredients in a bowl. Mix well.
- Add the Dijon mustard, Tabasco sauce, and season with salt and pepper to your taste.
- Make a small well in the mixture, and place the egg yolk in it.
- Serve immediately with toasted bread on the side.
