Classic French Beef Tartare

Ingredients:

  • 1 pound Beef Tenderloin
  • 2 tablespoon Capers
  • 1 medium size Shallot
  • 2 tablespoon Parsley
  • 1 teaspoon Dijon Mustard
  • to taste Tabasco Sauce
  • to taste Salt
  • to taste Pepper
  • 1 Egg Yolk

Instructions:

  1. Make sure the beef tenderloin is very fresh. Freeze it for 30 minutes for easier cutting.
  2. Finely dice the beef tenderloin, capers and shallot. Chop the parsley as well.
  3. Combine all the chopped ingredients in a bowl. Mix well.
  4. Add the Dijon mustard, Tabasco sauce, and season with salt and pepper to your taste.
  5. Make a small well in the mixture, and place the egg yolk in it.
  6. Serve immediately with toasted bread on the side.
