Classic Boeuf Bourguignon

Ingredients:

  • 6 slices Bacon
  • 3.5 pounds Beef chuck
  • To Taste Salt
  • To Taste Black pepper
  • 1 Onion
  • 2 Carrots
  • 4 cloves Garlic
  • 1 bottle Red wine
  • 2 cups Beef broth
  • 1 tablespoon Tomato paste
  • 1 teaspoon Thyme
  • 2 Bay leaves
  • 2 tablespoons Butter
  • 1 pound Mushrooms

Instructions:

  1. Cut bacon into small strips and cook until crisp. Remove and set aside on paper towel.
  2. Season beef with salt and pepper, then sear in bacon fat until browned on all sides. Remove and set aside.
  3. Add diced onion and sliced carrots to the pot, cook until softened.
  4. Add minced garlic and cook for another minute.
  5. Pour in wine and scrape bottom of pot to release all the flavorful bits. Add cooked bacon, beef, beef broth, tomato paste, thyme, and bay leaves.
  6. Cover and simmer on low heat for 2 to 3 hours, until beef is tender.
  7. In a separate pan, melt butter and add sliced mushrooms, cook until browned and softened.
  8. Add mushrooms to the pot, adjust seasoning if needed, and simmer for another 15 minutes.
  9. Serve hot with fresh bread or over mashed potatoes.
