
Classic Boeuf Bourguignon

Ingredients:
- 6 slices Bacon
- 3.5 pounds Beef chuck
- To Taste Salt
- To Taste Black pepper
- 1 Onion
- 2 Carrots
- 4 cloves Garlic
- 1 bottle Red wine
- 2 cups Beef broth
- 1 tablespoon Tomato paste
- 1 teaspoon Thyme
- 2 Bay leaves
- 2 tablespoons Butter
- 1 pound Mushrooms
Instructions:
- Cut bacon into small strips and cook until crisp. Remove and set aside on paper towel.
- Season beef with salt and pepper, then sear in bacon fat until browned on all sides. Remove and set aside.
- Add diced onion and sliced carrots to the pot, cook until softened.
- Add minced garlic and cook for another minute.
- Pour in wine and scrape bottom of pot to release all the flavorful bits. Add cooked bacon, beef, beef broth, tomato paste, thyme, and bay leaves.
- Cover and simmer on low heat for 2 to 3 hours, until beef is tender.
- In a separate pan, melt butter and add sliced mushrooms, cook until browned and softened.
- Add mushrooms to the pot, adjust seasoning if needed, and simmer for another 15 minutes.
- Serve hot with fresh bread or over mashed potatoes.
